You don't need to make a roux, it skips that step. Here's a new recipe I'm going to make for you that is loosely based off another recipe for stove top mac and cheese and a fondue recipe I found. When I think of Mac and Cheese, I don't think of something that thin. I still think you might want to go the way of a white roux -> cream sauce -> cheese sauce. Can I drizzle some cloves in oil and bake for 15-20 min and then mash it and add it to simmering cream rather than simmering cream with raw crushed garlic and sieving the pieces out? Edit- I just read the ingredients of the dish description again and it says " roasted garlic infused cream". Should I used less cheese and maybe add more cream or perhaps even milk or butter? Because I only know the ingredients and not ratios I am helpless to modify the recipe without assistance. Also the melted gruyere was evident as cheese strings when the noodles were scooped on a fork whereas their version didn't have strings of melted cheese, again it was smooth. It was delicious but the consistency was all wrong! The restaraunt version was completely creamy and smooth while mine had clumps of creamcheese/gruyere clustered in bits around each noodle, instead of being cream (think like Kraft mac how it's a yellow sauce with no chunks). I crushed the garlic and simmered it in cream for 5-10 min, sieved out the garlic and returned to pan with cream cheese, grated gruyere and combined until melted. I boiled the mac, strained, and tossed with oil and set aside. It was the most delicious thing I've ever eaten and I want to replicate it for my family. The ingredients in the description were Garlic-infused Cream, Swiss Cheese, Cream Cheese, and Black Truffle Oil.
